Overnight Blueberry French Toast



We LOVE breakfast! 
It is so convenient to have something already put together, in the refrigerator, that is ready for the oven!

(I actually served this for dinner. We like breakfast at any time! Instead of it being refrigerated 'overnight', I made it in the morning and it was ready for the oven at 5 pm.)

Overnight Blueberry French Toast


What You'll Need:
Toast:
12 slices French bread, cut into cubes
4 oz. cream cheese, cut in cubes
1 cup fresh blueberries
12 large eggs
1/3 cup real maple syrup
2 cups milk
Syrup:
1 cup sugar
1 cup water
2 Tablespoons cornstarch
1 cup fresh blueberries
1 Tablespoon butter


Here's How:
1. Place 1/2 of the cubed bread into a 9 x 13 baking dish.
Sprinkle cream cheese cubes and blueberries over bread cubes and then top with the remaining bread.

2. Mix together eggs, milk, and syrup. Pour mixture over bread cubes.
Cover with foil and refrigerate overnight.

3. Bake covered at 350* for 30 minutes. Remove the foil and bake for another 30 minutes or until fluffy and golden. Serve with blueberry sauce.

4. Blueberry Sauce: Cook water, sugar, and cornstarch until thickened. Stir in blueberries and simmer for 10 minutes. Add the butter and stir until melted.
